Prepare the squash
1. Cut the squash into small cubes, finely chop the onions, and slice the garlic.
2. Steam the squash until cooked.

Prepare the Parmentier
1. Sauté the onions, garlic, and plant-based protein together in sunflower oil for 5 minutes.
2. Mash the squash, season, and add nutmeg to taste.
3. Finely chop the coriander and add to the protein mix.

Assemble for baking
1. Place a layer of the plant-based protein mix in a gastronorm pan, then top with the mashed squash.
2. Sprinkle with breadcrumbs and bake in the oven at 170°C (340°F) for 10 minutes until golden.
Other seasonal vegetables (e.g. carrots, broccoli) can be substituted for the squash if desired.
